Day 1 & 2

Day 1
For Sunday evening we made homemade salsa and Hungry Girl’s Southwestern Surprise (find the recipe here).

We halved this recipe because it makes a TON. It’s very delicious, easy to make, and filling. I did a VERY rough estimate on cost of the dish. It’s tough because so many of these ingredients are shared across a lot of meals so keep that in mind. 

Dish has provided: 4 meals (Dinner - Sean and myself and 2 lunches) 
Total cost for dish: $7.22
Cost per meal: $1.81

The salsa will last for 3 different meals as a snack. That means it actually has 6 servings (since Sean and I each get our own serving). Cost of salsa (including 1 bag baked tortilla scoops and 1 bag regular chips): $8.50 
Cost per serving (6): $1.42 

Day 2
On Monday evening we marinated and baked the chicken breast from the whole chicken Sean bought. We also bought fresh green beans (yum!), a bag of potatoes, and used some bread from the loaf we bought for the week. We made our own garlic butter and toasted it. The meal was VERY good!

Dish has provided: 3 meals (Dinner - Sean and myself and 1 lunch)
Total cost for dish: $5.76 
Cost per meal: $1.92

It’s interesting to me how inexpensive the chicken was since you usually think a meal like that would cost more. Benefits of buying a whole chicken!
