Day 5
After our break yesterday we were in full swing again last night. We decided to make a chicken tortilla soup. It closely followed Hungry girl’s chicken tortilla soup recipe (here) with a few tweaks.
One of the main differences was we used the rest of the whole chicken Sean bought for the chicken (obviously) and the chicken broth. I really think the homemade broth made a big difference in the overall taste and freshness of the soup.
The recipe is pretty simple, but very delicious. We cut up some toppings and instead of baked chips (like HG suggests) Sean cut up tortillas we had already bought for other meals and made strips and fried them to throw in the soup. Here are the yummy toppings.

The challenge has been going well and we’re enjoying it, but last night Sean said, “I just really want a Jimmy Johns sandwich!” Only 2 more days Sean :)
