Day 7
We made it to the final day! It’s been a fun challenge and overall great experience.
We had an interesting challenge for today. There was a football watch party at a friend’s house that normally includes food and bringing snacks, etc. The game started at 5:30 (Va Tech) and Sean wanted to be there for kickoff. We had to figure out how to squeeze in meals before then, and potentially bring snacks so we didn’t have to eat there. Here’s our solution.
We made breakfast tacos for breakfast/ brunch. We ate around 11am and they were delicious! We made them with egg, cheese, bacon, and potatoes (We had bought a big bag of russet potatoes and used them throughout the week. For these we cut up and fried cubes of potatoes.) We didn’t have any homemade salsa left over for the tacos :( Lesson learned, we should have put aside some salsa for these at the first of the week.

We ended up having a VERY early dinner before the game. That way we won’t be tempted to snack at the party. For our final meal we made salads with leftover veggies, homemade croutons, cheese. We also did baked potatoes with the rest of our bag of potatoes. We also chopped up the remaining bacon and were able to use it as a topping! Very simple, still very delicious.
Finally, we brought popcorn to snack on at the part in case we get hungry. We haven’t actually eaten our popcorn at all yet. I have an air popper so it’s MORE delicious than microwave, and the off brand popcorn kernels were just $0.80 for the entire bag! I can make some and contribute to the party, while also having a food stamp challenge approved snack. Major win!
